Abstract
The major consumption of edible oil in Taiwan is refined oil rather than pressed oil. While after the break out of food safety crisis, the inquiry and demand for native pressed oil is dramatically increased. The main resources for native pressed oil are seeds of peanut, sesame, and camellia tree. This is because that the materials are available and the whole oil-manufacturing process can be finished in Taiwan. Among them, camellia seed oil is well-known because of its oil-stability and health-care-activity and has caused the undersupply of it. This attracts a lot of new farmers and food-manufacturing investors involved in this industry. While there are a lot of risks during the whole oil-manufacturing process and little attention has been given to the point. Therefore, there is a need to investigate the relationship between the manufacturing process and quality of camellia seed oil and also the health of camellia tree should be taken care of.
